In case you haven't ventured recently into Urbaniak Brothers Quality Meats, 310 E. 24th St., you might not know that there's a thriving bakery, Herb & Honey Bakery, where Jessica Schultz works every day, pressing, rolling, cutting, shaping, filing and, well, baking, dusting and selling her wares right there inside the doors.
"I found this opportunity in September," Schultz, 35, said. "We opened in November."
Schultz is no newbie to the bakery game. She owned and ran a bakery in Virginia for six years after school there for nutrition and agricultural science, and had worked at Art's Bakery and Wegmans bakery before she and the Urbaniaks found each other.
"I still feel like I'm winging it though," she said with a smile.

In fact, she just took on an employee, Vince Bartone, 35, to help her. She takes and fills preorders throughout the week and sells to walk-ins on Fridays and Saturdays.
Her dreams go way beyond baking, however. She hopes to one day open an urban farm cafe that serves food all grown and produced locally. She plans to sell some baked goods at the Little Italy Farmer's Market this summer. Schultz is already getting ingredients from No Dirt Farms in Fairview, Fat Hank in Mill Village and Hogs and Heaven on Route 8, as well as Wildfield Farm in Erie.
"We've done all this with absolutely no advertising," she said, never stopping her work on cappicola and Swiss croissants as she chatted in her 200-square-foot kitchen with "friends" Bernie, the mixer; Bart, the 20-quart mixer; Brutus the sheeter; and Delores, the second oven.
"I name everything," she said with a laugh. "My car is Mickey."

As she was moving onto pretzel dough balls stuffed with pepperoni and mozzarella, she said, "If you have a bakery in Erie, you have to stuff pepperoni into something."
Right now, you can buy baked goods Fridays from 9 a.m. to 5 p.m. and Saturdays, 8 a.m. to 3 p.m. Order by Wednesday for Friday pick-up after 10 a.m. or Thursday for Saturday pickup after 10 a.m. The rest of the days, she is desperately trying to bake enough to keep up the demand created by those hours.

In other news:
Cloud Nine Wine Bar, 25 E. 10th St., has reopened. The new hours are Tuesdays to Thursdays, 4-10 p.m.; and Fridays and Saturdays, 4 p.m. to midnight. The kitchen closes at 10 p.m. every day.
According to a recent newsletter, Meadville Markethouse is now offering pork chops, fresh blue oyster mushrooms, handmilled soap and frozen vegetables, Hillside Dairy beef, and pork from Mozes Maple Leaf Farm.
A new Dunkin' is headed for the Millcreek Mall, with an opening date of June 9, according to a statement from DALRT Inc., the franchisee.
Openings: Whole Darn Thing, 318 W. Plum St., Edinboro; Inlaws Taco Hut, 130 Scots Glen Drive, Edinboro; Kim's Kreamery, 60 Main St., Union City.
