Herb'N Eats' Chef P is back with a surprise for Spartanburg foodies - Spartanburg Herald Journal

Spartanburg chef Sedrick “Chef P” Posey, formerly of Herb'N Eats, is known for his creative and delicious twists on comfort food.

He draws inspiration from his youth.

Growing up in the kitchen with his grandmother and spending many of his younger years as an artist helped Posey develop a food philosophy that is the basis of his new specialty dessert start-up, PuddN'.

With his new venture, Posey offers an aesthetically-pleasing and thoughtful alternative to the typical grab-and-go dessert in a plastic or styrofoam cup.

"I always looked at my food or whatever I did as artwork. People eat with their eyes first, so if it looks good, it's more appetizing to eat," Posey said. 

'I wanted to do something outside the box'

Posey is currently offering four varieties of his made-from-scratch banana pudding layered with delicately crumbled cookies or bright red berries in 16 oz. mason jars for $5-7 each. 

"After Herb'N Eats shut down, I was getting many, many emails and phone calls about my banana pudding and my cookie puddings, so I decided, 'Hey, maybe I do some different types of puddings,'" Posey said. "I don't like to do anything that someone else is doing, so I didn't want to just come back selling just regular pudding and comfort food. I wanted to do something outside the box."

Banana, cookie, strawberry walnut and mixed berry pound cake puddings with house-made pound cake from Mama Sue's Homemade Help will be available this spring. 

Puddings will be sold online and available for pickup or delivery. An order form will be going up on the PuddN' Facebook page next week, but for those who can't wait, Posey will be participating in Mama Sue's Spring Pop Up Shop this Saturday from 10 a.m.-2 p.m. at Mama Sue's Homemade Help, 401 E. Kennedy St. in downtown Spartanburg.

Seasonal ingredients 

Posey said he sources as many of his ingredients as he can locally and keeps everything in season, so certain flavors will come and go throughout the year. 

"Stuff like strawberries, I love to do in season, and I try to use local produce stands. When I was at Herb'N Eats, I used to use Belue Farms to get my strawberries, sometimes Strawberry Hill," Posey said. 

His unique banana pudding recipe that captured the hearts of his Herb'N Eats regulars also sets the product apart.

"It all started from the recipe from my grandmother and I added my own touch. My banana pudding, to me, tastes like vanilla ice cream, but you have that little hint of banana. I think that's what sets me apart, it's not just a typical banana pudding taste," Posey said.

Supporting Spartanburg 

Posey has been working at Mama Sue’s since his restaurant Herb'N Eats was forced to close during the COVID-19 pandemic. He says owner Sue Thomas was the first person he told about his new project.

"She was on board, and I'm forever grateful and thankful. She's always going to be honest and truthful to me and you need those types of people in your life," Posey said. "It's been great (working with her)."

Thomas said she hopes Saturday's pop up will help spotlight some of the talented independent chefs and bakers in Spartanburg. The first event will feature several niche small food businesses, including Little Jennie's Baked Goods, Daydreams Confections, and Bee Happy Cakes & Confections. Thomas plans to hold the event monthly.

"I hope that a ton of people show up and get to experience everything I've experienced from every single one of them. I know what (the vendors) can produce and it's absolutely phenomenal. There's a lot of hidden talent," Thomas said.

For Posey, Saturday's pop-up is just the beginning for PuddN'. He hopes to add more flavors, expand his offerings to include a make-your-own-jar option, and eventually open a brick-and-mortar PuddN' location. He also hopes to reinstate his Cooking with Chef P classes and get kids back in the kitchen.

"I'm really excited about this new adventure and this new journey because there's so many possibilities and things that I can do," Posey said. "I'm very excited for Saturday to actually release this to the public."
