Puff pasty herb pinwheels make for irresistible nibbles - Boston Herald

This Christmas season will be reimagined and low key for many of us as we let go of some of our holiday traditions and gatherings, but we can still brighten the holidays with our immediate family members by preparing some of our favorite dishes. These can’t-eat-just-one puff pastry pinwheels are so easy to assemble and bake and are the perfect holiday nibble with a glass of crisp prosecco.

PUFF PASTRY PINWHEELS

2 sheets prepared puff pastry, thawed and kept cold

6 T. prepared pesto sauce

1 c. grated parmesan or asiago cheese

2/3 lb. prosciutto or salami sliced very thin

Preheat the oven to 425 degrees.

Roll each sheet of pastry into a 14-inch square on a lightly floured surface

Brush each sheet with 3 tablespoons of the pesto sauce. Sprinkle half the cheese evenly over the sauce.

Lay half the slices of prosciutto or salami slightly overlapping to cover each sheet.

Starting at one end, roll each sheet up to form a tight roll.

Wrap each roll in plastic wrap and refrigerate until ready to bake or freeze for future use.

Use a sharp knife to cut 14 1-inch pieces from each roll and place them on ungreased baking sheets, spacing them ½-inch apart. Bake until puffed and golden brown. Serve warm. Makes 28 pinwheels.
