For the filling:

1/2 packed cup (about 15g) fresh herbs (such as basil, chives, coriander dill, mint, parsley, thyme), chopped

1/2 cup (60g) cheddar cheese, grated

1/4 cup (30g) Parmesan cheese, grated

1/3 cup (80g) ricotta

Zest from quarter of a small lemon (about 1/2 a teaspoon)

Salt and pepper

1 egg, beaten for the egg wash

Flaky sea salt and herbs, for finishing
