Recipe: Herb-Marinated Beans - San Antonio Express-News

This hearty and herbaceous bean dish can be served as a side or a vegan main course.

1 shallot, finely chopped

3 tablespoons white wine vinegar

2-4 olive oil and herb ice cubes (such as mint, parsley, cilantro, chives, and/or dill)

2 (15-ounce) cans cannellini beans, navy beans, black-eyed peas, or chickpeas, or a mix, rinsed

1 teaspoon Aleppo chile flakes (or other mild chile flake)

Kosher salt

Instructions: Combine shallot and vinegar in a small bowl and let sit 5 minutes.

Meanwhile, place the herb ice cubes in a bowl to thaw. When melted, add the beans and red pepper and toss to combine. Season generously with salt.

Add shallot mixture to bean mixture and toss gently to combine. Cover and chill before serving. The beans can be made up to 3 days ahead, and the flavor will intensify the longer they marinate.
