How to Grow Herbs and Vegetables in an Apartment - The Beet

I love visiting farmers' markets every summer and picking up fresh herbs and veggies covered in bits of earth. But this year with the current pandemic, local greenmarkets in some areas aren't open. Sure, you can visit the grocery store and sort through products, but it’s much more fun to grow your own. Urban gardening is also the perfect lockdown hobby and may save you money on your grocery bill.

But if you are like me and live in a city apartment with limited space and sunlight, many items are just impossible to grow. But there are several herbs and some veggies that thrive on balconies, windowsills or fire escape landings. Since it’s already June it’s best to skip trying to grow them from seeds and visit your local garden center, nursery or independent flower shop selling items already in pots. I recently purchased several herbs and with some loving care, they have already doubled in size.

If it’s your first time growing herbs on your balcony here are a few things you may need:

  • Soil
  • Organic Fertilizer
  • Extra pots in various sizes with an opening at the bottom to drain water (choose clay, plastic, or ceramic pots and if you have space consider a larger wooden planter)
  • Small balcony-sized shovel
  • Watering can
  • Hanging baskets
  • Gardening gloves (optional)

Place your herbs on the section of your balcony that gets the most sun. Frequent watering is important so they don’t dry out - balcony gardens need more watering than regular gardens. Slow-release natural fertilizers are best and some herbs can be trimmed and pruned to accelerate growth. Happy planting! 

  1. Basil

This popular herb comes in a slew of varieties and will thrive in balcony pots. I typically purchase a small basil plant and it doesn’t take long for it to grow large enough so I can harvest a few leaves. Begin using the leaves as soon as the plant is big enough to spare some. Sweet basil is the most popular and is known for enhancing Italian dishes with its licorice clove flavor. This widely used herb is perfect in your favorite pesto sauce recipe, pasta sauce, or in fresh salads. Basil also goes well on that fresh-baked sourdough bread everyone is baking in quarantine – add a slice of plant-based cheese for a delicious appetizer.  

Health Benefits: Basil is typically used in small quantities so vitamin and mineral benefits are limited, but are known to provide Vitamin K. Basil extracts are also used in essential oils and holy basil tea.

  1. Mint

Who doesn’t love fresh mint tea after dinner? Even more exciting is when you can step onto your balcony, pick a few mint leaves and let them steep for the perfect cup. My mint plants tend to grow wild, which just adds to the excitement of balcony life. Transplanting mint into larger pots helps it sprout even bigger. This fragrant herb is super easy to grow and comes in multiple varieties such as chocolate, peppermint, ginger, spearmint, and pineapple mint. Harvest your mint sprigs before the plant flowers and if you want to extend the plant life pinch off the flowering buds.

Health Benefit: Due to mints' strong flavor it’s typically added in small quantities but does contain several nutrients and is a good source of Vitamin A and antioxidants. Mint may help relieve indigestion and an upset stomach.

  1. Parsley

There are many varieties of parsley but the two most common are Italian flat-leaf and French curly-leaf. Both varieties are great culinary herbs and flourish. You can even grow parsley in small containers right on your windowsill. The soil should be kept moist so don’t let it dry out. Parsley is extremely versatile and can be added to many meals such as pasta and veggie dishes, fresh salads, used as a sandwich or soup garnish or a veggie burger topping. You can also dry your parsley to use all year long.

Health Benefit: Parsley is pretty impressive and I have used mine in green juice as it’s known for having a high nutritional value and helps fight inflammation. Parsley contains vitamin A, C, and K and is a healthy antioxidant.

  1. Lavender

I’m in love with my purple lavender plant! This gorgeous perennial has a wonderful fragrance and adorable blossoms. After purchase, I replanted my lavender in a bigger and better pot, as the original seemed quite flimsy. Despite lavender needing more sun than I get on my balcony, about six hours, I won’t give up and whatever time my lavender plant and I have together is precious, especially during the time of pandemics. You can add dried lavender buds to tea, use them in a cookie recipe, or if you are very creative lavender can be added to salve, soap bars, and hand cream.

Health Benefit: Happiness! Lavender has been used since ancient times and has been known to treat nausea, skin irritations, headaches, and promotes overall positive well being.

  1. Rosemary

All varieties of rosemary will grow in containers and it’s a popular and savory herb. The more light the better so the needle-like leaves will flourish on this Mediterranean plant. It’s super fragrant and is a nice touch to your balcony garden. Use it as a seasoning in your favorite plant-based recipes such as stews, casseroles, soups, pasta, tofu, and a variety of grains like rice and quinoa.

Health Benefit: The health benefits of rosemary are mixed but rosemary has been used in traditional herbal and Ayurvedic medicine for years. It also has many aromatic uses and rosemary essential oil has become quite popular. 

  1. Radishes

You can grow radishes in containers and pots as they grow well with limited space. There are several varieties of radishes with the most common being the cherry belle round radish. Other varieties include daikons, icicle radishes, elongated variety, black radish variety, or the stunning watermelon radish. Radishes do well with more sun, about six to eight hours a day. But they are also known to flourish with only partial sun in a hot climate as I proved last summer. You can also grow radishes indoors in long rectangular pots. When you harvest the radish roots you can also harvest the green tops to use in salads and soups. You can pickle radishes, shave them into a slaw, slice them in a sandwich, or chop them up in your favorite dish.

Health Benefit: Aside from being very pretty to look at, this root veggie is known for improving immunity due to high levels of vitamin C. Other nutrients include Vitamin E, A, B6 and K, folate, and potassium. Radishes also support a healthy digestive system since half a cup of radishes equals about one gram of fiber. 

  1. Cherry Tomatoes

Every year I attempt to grow cherry tomatoes on my balcony and the biggest challenge is the lack of sunlight. But if you have long afternoon sunlight you have a solid chance of growing blossoming tomato plants. Choose stable pots that drain well with fertile soil 12 inches deep if possible. Regular watering is key, especially in hot weather. As they get taller use a cage or trellis or creatively use your balcony railing. You can also grow cherry tomatoes in hanging baskets and they will brighten up your space all season long. We love eating cherry tomatoes plain, in salads, cut up in sauce, toppings for a homemade vegan pizza or roasted with asparagus and baby potatoes. These small versatile tomatoes are easily integrated into many scrumptious meals.

Health Benefit: Although tomatoes are used as veggies they are considered fruits from a scientific perspective as they form from a flower, but the debate continues. Tomatoes contain vitamin C, fiber, potassium, folate, and vitamin K. Furthermore; you can harvest your tomato seeds to grow more tomato plants next year.

In the park at the Berlin Gleisdreck, right next to the volleyball fields of "Beach 61", lettuces, basil, rocket, chard, sage, oregano and parsley sprout on a wooden wall four meters wide. The plants are stuck in eight white steles placed next to each other and connected by a couple of hoses, the Berliner Zeitung reports.

The whole thing looks like an art installation, but it is a model project of the TU Berlin: "We want to test and show here how wastewater can be treated in a mobile plant and reused on site," says Grit Bürgow. She is a lecturer in the Department of Urban Planning and Settlement and project coordinator of the Roof Water Farm in Kreuzberg. An IBA housing project from 1987 combines water treatment with space-saving cultivation methods for salad and vegetables. The model project at the beach volleyball facility is now a continuation of this, which is being funded by the Ministry of Education as part of the Gardening Services research project.

The plants growing on an outer wall of the showers are supplied with the treated wastewater. "Every day, 1000 liters of shower water are collected here, cleaned and then used to water the plants," says Andreas Horn. Horn studies urban design at the TU and designed and built the so-called shower towers together with Grit Bürgow and students from the Roof Water Farm project workshop.

Microorganisms clean the water
The heart of the system is the water house: In three large black tanks, microorganisms clean the water of soap residues, shampoo, skin particles and other dirt until it is clean enough to be used for irrigation without any problems. Water samples are taken regularly to ensure that the applicable guidelines are adhered to.

From the water house a pipe leads past several vats with reed once around the shower installation up to the plant steles. The purified water finally ends up in a 200-liter tank, where it is enriched with fertilizer, regulated to the appropriate pH value and transported to the plants.

The herbs and lettuces do not grow in soil, the roots come directly in contact with the nutrient solution. Expanded clay balls give them the necessary hold. Every hour they are sprinkled from above for five minutes. The water flows down in the steles and from there back into the irrigation tank. A closed circuit. "Such a system, which can do without soil and is therefore much lighter, is called hydroponics. It has the advantage that you only use a small amount of water and can fertilize the plants precisely," says Horn.

Actually, the plant wall should already be installed in spring. But because of corona, construction was delayed by several months. The showers of the beach volleyball facility can only be used again since July.

So for just under two months now, wastewater has been accumulating again, which can be used to water the plants after they have been treated. On Tuesday the first harvest was made. In normal years, at least four to five harvests are possible during the beach volleyball season from May to September. Then the yield should also be large enough to be used in the affiliated gastronomy.

HERB BENHAM: Praising a harmonious man - The Bakersfield Californian

High up on the list, near the top of the things to like about Bakersfield is Robert Provencio, who until recently was music director of the Bakersfield Master Chorale.

Nobody could tell a story like Robert (I’m not trying to make him sound dead). He could tell you the same story 10 times, and he did, and every time he told it was like brand-new and fresh-out-of-the-storytelling box. He relished telling the stories as much as choir members liked hearing them.

Sense of humor? Yes, and it usually involved the sopranos either in the setup or the punchline. There is something inherently funny about the sopranos that dovetails with their inherent importance to a choir’s overall sound.

Robert loves music and he wants you to love it as much whether you are a singer or a member of the audience.

When news came that he was “laying down his baton due to health reasons” (he will continue to administer the music ministry at First Presbyterian and teach his online classes at CSUB), it made me think of singer Tom Waits’ reaction to the death of artist and musician Captain Beefheart several years ago.

He told the Los Angeles Times: “He was like the scout on a wagon train. He was the one who goes ahead and shows the way. He was a demanding bandleader ... He drew in the air with a burnt stick. He described the indescribable. He’s an underground stream and a big yellow blimp.

“ ... He was a rememberer. He was the only one who thought to bring matches. The high water mark.”

Not all of it fits, but enough does. Thanks, Robert.

Judy writes that her “Grandma Nettie made the best white bread ever. When we would go to her apartment she would always make my sister and me toast from her homemade white bread. She had an old fashioned open-the-door toaster and would put in nice thick slices. Slathered with butter, sitting in her tiny, neat kitchen. The best!"

The Kern Audubon Society sent an email recently saying that the American dipper (Cinclus mexicanus) had been named the bird of the week (collectively they are known as a ladle of dippers). I was happy to hear that not because I had heard of the bird or knew anything about it, but the name itself — American dipper — had an upbeat, fun-to-say sound to it.

Repeat after me: American dipper. Tell me you didn’t just get a lift.

Song recommendation of the week

Like everybody else I knew Johnny Paycheck through “Take This Job and Shove It” but an even more compelling song is “I’m the Only Hell (Mama Ever Raised).”

It shows how dynamic Paycheck’s voice was in the same way that Freddie Mercury of Queen’s was.

HERB BENHAM: Effort will take you to the promised land - The Bakersfield Californian

“Herb, I’d like to talk to you about something,” she said.

Is there anything more ominous than that sentence and those nine words? “Something” could be anything, everything and something in between. Those nine words could be nothing much or nothing more than an invitation to enter the relationship Twilight Zone.

“I don’t think you should make the bed anymore,” she said.

You could have knocked me over with a feather or tickled me with it. I wasn’t sure what to think. I was somewhere between thrilled, insulted and ready to burst into song.

First, I had to go Actor Johnson. Sell concern. Feign injury of the emotional variety.

“Why don’t you want me to make the bed anymore?” I asked in a smallish voice.

She paused, which made me think I had sold concern. No reason to wound me anymore than she thought she already had.

“I appreciate you making an effort,” she said.

“Effort.” When somebody uses the word “effort," it is rarely good unless you’re in third grade or are the last competitor to come in in the triathlon. Effort is a stand-alone, the word used to describe performance when all else fails and no other word fits.

“Effort” means not only do you have no natural aptitude for the task and no talent, but you have no chance of developing either one no matter how much effort you put in.

“The sheets are usually lopsided,” she said. “Sometimes the bedspread is longer on one side than the other. “

Stop. I can’t take this anymore. You have crushed my spirit and ruined my dreams, but does this mean, I am freed of the responsibility of making the bed?

I had started helping with the bed about 10 years ago. It was one of those “it’s the least I could do” moves. Apparently the least I could do was the least that I did.

I had mixed results even by my own lax standards. I would walk back and forth across the foot of the bed like the night watchman in a lighthouse searching for life on the horizon. I lengthened, pulled, tugged, crinkled and stretched, logging more miles than a Costco employee ferrying the extra sleeve of bagels for a customer one discount short.

I had my successes, sure I did, I wasn’t a complete bed-making loser but oftentimes my strategy devolved into covering up this sin or that shortcoming.

That’s what the decorative pillows are for. Some people use the pillows as if they were tying a bow onto an expertly wrapped present. For others, the pillows are a splashy bandage hiding a wound that will not heal.

Band-Aids are fine but not fine enough because when the decorative pillows are removed, the full housekeeping horror is revealed, and even the art of distraction does not hide a bed that looks like it was made by somebody without a design sense but with a morning drinking problem.

I could try to do better or I could take my medicine, which was less cod liver oil than spoonful of sugar. I had been fired and this was no time to take up my termination status with HR given the thickness of my personnel file.

It made me wonder about other household chores. How about washing dishes? I don't think I'm a pro there. When there are too many suds, sometimes I forget to scour the sink afterward and the next morning the sink bears witness of somebody who could not stay awake long enough to finish the job.

I had already been relieved of most cooking duties, so there was nothing to shoot for there.

In the meantime, the bed has never looked better. Neater, smoother, more inviting. I’d like to think I had something to do with this. The lesson is clear: With effort, anything is possible.

Though the growing season is ending, now is a great time of year to harvest herbs from the garden, according to Merryspring, in a news release. In this outdoor walk, DeSpirito will lead the group around the herb garden to see what’s blooming, check out recent additions, and speak about how to harvest different plants and their seeds. Guests are welcome to ask questions about the plants on display as well as their home gardens. 

Denise DeSpirito is gardener and herbalist. She has grown herbs all over the Northeast, including Avena Botanicals in Rockport, Stone Barns Center for Food and Agriculture in New York, and Farmacy Herbs in Rhode Island. She currently serves as garden manager at Merryspring. 

This event is part of the Summer Talk series, sponsored by First National Bank. Seating for this event will be outdoors in chairs set up a safe distance apart. This event is subject to change due to state and local regulations. 

The cost of this program is $5, with free admission for Merryspring members. Guests are encouraged to bring exact change to minimize cash transactions. 

Merryspring is your community nature center offering walking trails, cultivated gardens, wildlife, and ecology and horticulture educational programs all year round. The park is located at the end of Conway Road, just off of Route 1 in Camden behind Hannaford Shopping Plaza.
